Cookie FAQs
Questions about Variant Nutrition? We have the answers!
COOKIE FAQs
1. How can I enjoy Variant Nutrition protein cookie dough mix?
Enjoy Variant Nutrition protein cookie dough mix by just adding water and mixing! Once you've mixed the powdered protein cookie mix, you can enjoy eating it as raw cookie dough or baking them in the oven for warm cookies.
Variant Nutrition protein cookie dough mixes have a lot of FLEXibility and can be made into a variety of desserts to hit your macros. See our More Than Cookies ebook with 35 macro-friendly desserts to make with any VN protein cookie dough mixes.

2. How is Variant Nutrition protein cookie dough safe to eat raw?
Variant Nutrition mixes are made of a propriety blend of peanut flour with protein powders to bring a flavorful, slightly nutty taste for safe-to-eat raw cookie dough. In addition, powdered egg whites are added to our ingredients and are perfectly healthy to eat because they are pasteurized and dried by heat, removing the risk of salmonella.
3. How much water do I add to make my cookie dough?
Start with 1/4 cup of water and mix the dough. Some mixes are a little thirstier and need an additional tablespoon (or two!) of water.
Blend your dough in a bowl with a fork (stirring, pressing against the side of your bowl), and if it’s still dry and crumbly, add more water to your dough to get the perfect cookie dough texture.
*If you like stickier cookie dough, add the extra tbsp of water.
**If baking at high altitudes, your mix may need more water, but only add 1 tbsp of water and stir before adding more water.
***If your dough is sticking to your utensil or hand, dip your utensil/hand in the water and press down the dough.
4. How long do I bake my cookies?
Our best cookies bake at 350 degrees for 6 to 8 minutes.* We think the cookies are best when they start to brown on the bottom with a soft, gooey center.
*This information is based on baking a full bag of protein cookie dough mix for 12 cookies. If baking smaller batches or making larger cookies, cooking time may vary.
**Protein cookies will continue to bake on the cookie sheet when you remove them from the oven, so it's perfectly fine for them to have a center that is underbaked (still safe to eat raw!) as they will firm up more while cooling down.
***Oven temperatures and times vary, and depending on your oven and if you live in a high-altitude location, you may need to adjust your baking time.
5. Why do Variant Nutrition protein cookies cook so fast?
Variant Nutrition protein cookie dough mixes do not have any baking flour in them; they are a blend of whey and casein protein powder, which tends to burn FASTER than flour if you leave it in the oven for too long. We recommend watching your cookies closely because a burnt protein cookie, is a trash cookie.
6. How do I get round cookies?
As prepared dough, scoop out 12 cookies with a 1.4 cookie scoop (Ex. Protein Cookie Dough Mix: Chocolate Chip will roughly be 19 grams per dough ball).
Once all your cookies are on the cookie sheet, here are three ways to get a cookie shape:
Lightly press your dough balls in the center with a utensil or hand.
Pick up the dough ball and flatten it into a cookie shape, then place it back on the cookie sheet.
Use a cookie cutter to press the dough inside or to cut off the extra dough before baking.
*Variant Nutrition protein cookie dough mix doesn’t have much spread when baking, so make sure to form your cookie shape before baking.
7. Once made, can I store the cookie dough/cookies for later?
Variant Nutrition cookie dough and cookies are best eaten once prepared, but they can be stored for later.
i. Cookie dough should be stored covered in the fridge for up to two weeks.
If storing in the fridge as cookie dough, FYI:
a. Since we use sugar substitutes, the cookie dough will recrystallize in the fridge. This isn't a bad thing, as it doesn't change the flavor, but it may be slightly crunchier.
b. The cookie dough does dry out some, but the cookie dough still has a lot of flavor. You can eat it as is or add more moisture to it to make it creamier. Ex. water, milk, yogurt, butter, in oatmeal, etc.
c. You can bake the cookie dough after storing it in the fridge, but let cookie dough sit at room temperature for half an hour before baking.
d. If you want to keep the cooking dough longer, freeze the cookie dough in an airtight container.
ii. Baked cookies can be stored in a sealed container on the counter for up to a week; protein cookies will remain soft and airy.

Make your variants! Add peanut butter, apple sauce, greek yogurt, almond milk, etc.

16. What if I forget to flatten the cookies before baking?
You can't mess them up! Your protein cookie balls will puff up a bit and stay in sphere form with an extra doughy center.
17. Can the mix be microwaved?
In a pinch, yes! We found the best way to microwave the protein cookie mix is to take a serving size of the mix and add 2 tablespoons of water to a bowl. You'll want the mix a little wetter, like cake batter, then microwave.
We have this as one of our recipes in our More Than Cookies ebook. Check it out at https://www.variantnutritionmix.com/product-page/more-than-cookies-ebook
